This weekend I stopped into see my friends at Meat Craft Urban Butchery in Port Moody and bought three beautiful double loin chops from them.
The chops were from pigs raised in an ethical manner on Gelderman Farms in Abbotsford BC.
We breaded the shops with a light gluten-free crumb that had a bit of Italian seasoning to it before cooking the chops in an oven pre-heated to 400° for about half an hour. I didn’t actually check the time but I know it was about a half hour.
We tested the internal temperature of the chops and felt quite comfortable eating them once they hit an internal temperature of 150°.
Awesome flavour. Succulent meat that was loaded with flavour. This is why it is so great develop a relationship with a local butcher – one who you can count on to get ethically raised meat like the kind Meat Craft brings in from Gelderman Farms.
Yes, these chops cost more than the grocery store pork chops but they are SO worth it.
