One of the places we find recipes that we like, recipes like this Italian-Style Apple Cake that actually tastes great, is at our local Thrifty Foods. The directions are pretty easy to follow and the results are really tasty. Here it is:
Prep Time: 30 minutes with a Cooking Time of 40-45 minutes.
Makes: 8 servings
- 1/2 cup ricotta cheese
- 1/2 cup butter, at room temperature
- 1 cup sugar
- 1 large egg
- 1 cup flour
- 1/4 cup cornmeal
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 3 medium royal gala apples, peeled, cored and grated, about 2 cups
- 1 Tbsp. lemon juice
- Icing sugar, apple slices and other fruit for garnish
Method:
Preheat oven to 350 degrees F. Grease a 9 or 10-inch spring-form cake pan. Cream together ricotta, butter and sugar until light; beat in the egg. This is easy to do if you put these ingredients in a stainless bowl and mix with a fork.
In another bowl, whisk together the flour, cornmeal, baking powder, salt and cinnamon. Mix into the ricotta mixture until just combined. Mix grated apple with lemon and then fold into the batter. Pour cake batter into the prepared pan and bake 40-45 minutes, or until golden brown and done in the centre. (Cake does not rise very much). Cool on a rack, and then transfer to cake plate. Garnish with apples and other fruit such as grapes and berries, dust with icing sugar, and serve.
Options:
For a slightly, sweeter taste, use ripe, grated pear in the cake instead of apple. If you like spices, along with the cinnamon, include a pinch of ground cloves and nutmeg in the cake batter.
