I was asked if I could repost the recipe that my mother gave me for the best ever meatless meatloaf. As an aside, I am still looking for a top quality, gourmet mac and cheese recipe. If you have a time-tested favourite, go to the “About” page to find my email and send it to me. For now, here is the meatless meatloaf recipe:
MEATLESS MEATLOAF
- 4 cups Special K cereal (I use whatever cereal I have in the house, often corn flakes or even bran flakes)
- 1 cup grated cheddar cheese (again, if I have mozzarella I use that)
- ¼ cup oil
- 1 cup chopped walnuts (cashews also work well)
- 1 can cream of mushroom soup
- 1 ½ teaspoons sweet basil
- 1 medium onion, chopped
- 1 teaspoon salt
- 3 eggs beaten
The original recipe my mother gave me did not say to do this step but I like to put the onions in a pan to make them sweat a little. This loosens up their flavour and makes the taste of onion in the meatloaf a little more mild.
After the onions are done you can mix all the ingredients together. Put it in a loaf pan and bake at 325 degrees for 45 minutes.
Serve with mushroom, béarnaise or any cream sauce favourite. I will add in here that it is spectacular sliced about an inch thick and then flopped into a hot frying pan with a dollop of butter. Brown one side, flip it over and brown the other. Serve with two eggs, over-easy for breakfast.
