Stuffed Pork Loin on the Ugly Drum Smoker

We had our first day without rain – the first day in 30 days with no rain! It was heavenly. So no rain? I got outside and fired up my Ugly Drum Smoker.

The end result was pretty darn good. The stuffing was a little wetter than I usually like but it had a nice, maple-bacon flavour to it. And the kids liked it! That’s a win.

I loaded the pork loins into the Ugly Drum Smoker at about 12:30 this afternoon and the first one came off the grill at 3pm. I cook pork to an internal temperature of 145 degrees and let it rest for about a half hour before slicing into it.

Oh, and the onions? The ones in the foil on the grill? Meh. I ate one but it was just meh. I wouldn’t do that again.
