On my recent visit to Kosho Sushi we tried the visually extraordinary Volcano Roll and the very tasty Tuna Aburi Oshi. I had the choice of tuna or salmon aburi oshi and I went with the tuna. The server assured me that whether I chose tuna or salmon, both would demonstrate the restaurant’s commitment to quality ingredients and creativity.
The Volcano Roll is a feast for the senses. This roll features a combination of fresh ingredients including crab mix, cream cheese and avocado. On the outside of the roll is tempura, spicy tuna and salmon, tobiko, green onions, sauce spicy mayonnaise, and unagi.
What sets it apart, however, is the dramatic presentation: the roll is given a quick torching, which not only enhances the flavours but also adds a very faint smoky aroma that tantalizes the senses.
Equally impressive is Kosho Sushi’s Tuna Aburi Oshi, a modern twist on a traditional favourite. This pressed sushi, a specialty from the Osaka region of Japan, is known for its distinct rectangular shape and the delicate balance of flavors.
Kosho Sushi takes this classic and elevates it by incorporating premium ingredients like seared tuna or salmon. The tuna is lightly seared with a blowtorch, creating a beautifully caramelized exterior while retaining a melt-in-your-mouth texture inside.
Topped with a hint of miso sauce, each piece of Tuna Aburi Oshi is a blend of smoky, savory, and subtly sweet notes.
Kosho Sushi’s dedication to culinary excellence is evident in every bite of their food. Now that I have tried the inventive and delicious flavours of Kosho Sushi’s Volcano Roll and Aburi Oshi sushi, I will definitely be returning to sample much more of their menu.
